These characteristics - unchanged throughout history - allow us to create the highest quality products.


The Caper

The plants of Capparis Spinosa are indigenous to the island of Pantelleria, and grow mainly in areas exposed to the sun – from the crevices of island stones, to the cracks of the dry walls that reside in the island’s castle. But the caper is also primarily grown for easy harvest. They are picked from May to late September, strictly by hand and in the cool morning hours.



The Vineyards

The cultivation of the vine sapling Pantesco, recognized by UNESCO in 2014 as a piece of World Heritage has over time shaped the landscape of one of the most beautiful agricultural environments in the world, which makes up the identity of Pantelleria. This arduous brand of cultivation is the glue of a local community which happily follows its secular traditions.


The Aromatics

The scents and aromas that stimulate our sense of smell and enhance our love of flavors are in rich supply here. Our herbs and medicinally rich essential oils are used more and more in everyday dining in order to preserve good health and well-being. We collect wild herbs and cultivate island-specific species which have adapted over centuries to the incessant winds chock-full of marine essences and aromas from the local plant ecosystem, and which have also appreciably augmented their organoleptic characteristics, properties, flavors, and unique fragrances and characteristics.


The Orchard

Our fruit plants such as apricots, peaches, plums, figs, mulberries and citrus fruits have been present on the island since ancient times and the isolation of these species has allowed the preservation of the characteristics of ancient and now rare phenotypes, propagated with grafts of wild root using the same species, from father to son, and from farmer to farmer.
